Summertime Grilled Salmon
I just created this recipe for a bbq with some friends and they all proclaimed it to be the best salmon they've ever had! It's fresh and light allowing the salmon to come through, while the lemon and herb bring a bright summertime burst of flavor. Drizzle the marinade over seasonal vegetables as well for a full meal.
Ingredients:
- 6oz portions of frozen Sena Sea Salmon
- 1/4 cup olive oil
- 1 Tbs white balsamic
- 1 clove garlic (minced)
- 1 Tbs fresh herbs (I used cilantro)
- Lemon juice from 1/2 a lemon
- salt to taste
- pepper to taste
- seasonal vegetables (I used asparagus and green onion)
Instructions:
Thaw salmon portions by placing in refrigerator overnight or cold water for about 30 minutes. Remove from package, rinse with cold water, and pat dry. Salt the flesh of the fish directly and set aside while making marinade.
Whisk remaining ingredients for marinade. Cover flesh side of fish with marinade, and toss vegetables with the remainder.
Place salmon on grill, skin side down. Arrange vegetable on grill as well. Pour any remaining marinade on the salmon to coat well. Close the lid, and grill salmon on med-high heat for 10-15 minutes. Do not flip the salmon! Grill until inside just turns from translucent to opaque (145 F internal temp).
Carefully remove from the grill and enjoy!
