The day I found out that my 3 kids all had different food sensitivities, I was in a total panic.
All of a sudden it felt like the world was filled with wheat and dairy and everything off-limits.
I remember receiving the news. We had a 6 year old, 3 year old, and an infant at the time. All three were sensitive to a different combination of gluten, dairy, eggs, and sugar.
It was SO overwhelming to learn...but at the same time, it was empowering to know I could help them by changing their diet.
Even with a master's degree in nutrition and foods science, I still struggled to get dinner on the table and was spending hours in the grocery store reading food labels.
But the answer I was looking for was not in a box of expensive gluten-free baking mix...it came when I remembered my roots.
I am a fisherman's granddaughter, daughter, and wife. My comfort foods are centered around wild-caught fish.
For me, the solution was in my freezer full of amazing wild-caught fish
I had forgotten what a huge advantage I already had from growing up in a multi-generational fishing family and having a supply of Rich's wild-caught fish in the freezer year-round.
Re-discovering the amazing health benefits of wild-caught fish, made us even more grateful than ever for our freezer full of fish.
I stopped focusing on what we couldn't eat and started focusing on the bounty of fish we already had. Leaning into a diet of fish and vegetables has helped our family not only survive but thrive.
