Serves 2
Ingredients:
- 4oz portions of frozen Sena Sea Salmon Patties
- 1 Cup bread crumbs
- Parsley
- Egg
- Flour
- Olive oil
- Salt and pepper
- 1 Cup plain Greek Yogurt
- Lemon juice
Instructions:
Partially thaw* the salmon patties and remove from the packaging. Preheat the oven to 350. Slice each patty into fourths. Place the bread crumbs, flour and whisked egg all into small seperate bowls. Chop half the parsley and add to the bread crumbs along with salt and pepper. Dunk each patty piece in egg, then flour then egg again and finally coat with an even layer of the breadcrumb mix. Place the patty bites on a greased cookie sheet and bake for 15 minutes or until breadcrumbs are golden brown on the bottom.
For the greek yogurt dipping sauce, chop the remainder of the parsley and mix evenly with the yogurt. Add in a tablespoon of lemon juice and a dash of pepper. Serve warm with dipping sauce on the side.
*working with slightly frozen patties will keep them from falling apart when coating with egg
