Salt Crusted Salmon with Creamy Avocado Sauce
I used this recipe for a recent live demo, and it was a hit! Everyone who tried it, loved it, and I've already heard from several people who went home and cooked it up. The creamy avocado sauce is bold with lemon and goes perfectly with the salt crusted salmon. This recipe is also versatile! You can use this method to quickly add salmon to any meal or salad, or use the avocado sauce as a salad dressing and make it a meal.
Salmon
2 Wild Alaskan salmon portions (6 oz)
2 Tbsp olive Oil
2 Tbsp salt, course ground
2 Tbsp pepper, course ground
Rinse salmon with cold water and pat dry. Place on baking pan. Coat flesh side with olive oil and cover with salt and pepper to taste. Flip salmon and repeat, coating the skin side with olive oil and then covering with salt and pepper. Place salmon on top shelf of oven (skin side up) and broil on high for about 5 min, until skin starts to bubble. Flip the fish over and place the flesh side under the broiler for about 5 more minutes, until browned.
Avocado Sauce
1/2 ripe avocado
1 garlic clove, minced
1/4 lemon, squeeze for juice
1/4 cup olive oil
1/4 cup half and half
Salt and pepper to taste
Mash avocado with fork in a medium bowl. Add remaining ingredients and whisk until smooth.
