Zesty Halibut in Parchment

Posted by Sena Wheeler on

Fun to create and fun to eat! Include the whole family and everyone can make their own custom meal. The parchment pouch seals in the flavor and moistness for a perfectly delicious meal every time. Plus, opening the cute little packets is like christmas morning at dinner time! Step by step photos included.

Ingredients

4 Sena Sea Halibut portions (6oz), thawed

8 oz. baby spinach, about 8 cups

1 orange, zested then peeled and sliced into 8 slices

2-inch piece of fresh ginger, peeled and finely diced

1 shallot, thinly sliced

Olive oil

Salt and pepper

Parchment paper

Directions

Preheat oven to 400 degrees

Cut parchment paper into 4-12x16 inch pieces

Zest the orange. Remove remaining peel including the white part. Slice into 8 slices.

Place spinach, orange zest and 2 slices of orange in the center of each piece of parchment.  Top with Sena Sea Halibut, ginger and shallots. Drizzle with about ½ tablespoon olive oil. Season with salt and pepper.

To make the packets, bring the long ends of the parchment paper together and fold down 3 times to seal.  Tuck ends under to secure.

Place packets on a baking sheet and bake until packets are puffed and the halibuts is cooked through about 16-18 minutes.

Place packets on plates, pull open and serve.

Enjoy!
