This is a warm salad- think warm bacon and spinach salad but even more rich, creamy and hearty. Braising greens are a nutritious mix of dark leafy greens that can include kale, chard, collards, mustard, bok choy, raddichio, and turnip greens. They are quite hearty, and need some type of heat to break them down before eating. Not only does this salad taste amazing, it's also a great way to get some new greens in your diet along with healthy fats to increase the vitamin absorption.
Ingredients
1/2 Sena Sea Smoke Black Cod portions (3oz)
6 Cups Braising greens, rinsed and dried
1 oz Sheep cheese, grated (or your preference)
Dressing
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Apple Cider vinegar
2 Cloves of garlic, minced
2 Tablespoons onion, minced
Salt and pepper to taste
Directions
Whisk together all dressing ingredients.
Warm skillet on medium heat. Place greens in skillet and coat with dressing. Stir frequently until greens are warmed and just slightly wilted, do not cook thoroughly.
Turn the heat off, but leave the greens in the pan.
Grate cheese over greens and place sliced smoked black cod on top. Place a lid over the salad for about 1 min, to slightly melt cheese and warm the smoked black cod.
Transfer to bowl and eat immediately.
